  1. 1Rinse, pick over and soak the beans overnight in water. Drain.
  2. 2Sauté garlic and rosemary in oil until onions translucent.
  3. 3Add water and beans. Bring to a boil and simmer for 1 1/2 hours.
  4. 4Add tomatoes, parsley, red wine vinegar, salt and pepper and heat through while stirring.
  5. 5Note: based on recipe from the Joy of Cooking - 75th Anniversary Edition.
