Salmon Cakes with Dill Sauce

Ingredients
- 2 tsp seafood seasoningNutrition
- 2 tbsps olive oilNutrition
- 2 tbsp light sour creamNutrition
- 1/4 cup Italian bread crumbsNutrition
- 1 medium red bell pepperNutrition
- 1 jumbo eggNutrition
- 2 regular cans salmon, drainedNutrition
- 2 sprigs dillNutrition
- 1 dash saltNutrition
- 2 tbsps mayonnaiseNutrition
- 2 tsps hot sauceNutrition
- 2 lemons yield lemon juiceNutrition
- 1 small onionNutrition
Directions
- 1Sauté onion and red pepper in olive oil until tender. Drain salmon and put in a mixing bowl. And onion and red pepper mixture to salmon.
- 2Chop 1 sprig of the dill and add it to the salmon mixture, along with the breadcrumbs, mayonnaise, egg, juice of 1 lemon and seasoning.
- 3Make 4 even patties from the mixture and cook on a griddle pan (with a tiny bit of cooking spray like Pam) for about 6 minutes on each side.
- 4To make the dill Sauce, combine sour cream, juice of the other lemon and the rest of the chopped dill in a small bowl and mix well. Season to taste with salt and a little hot sauce, if you like.
- 5Serve sauce on the side or right on top of the salmon cakes!
