Tilapia Fish Cakes

Ingredients
- 8 oz tilapia filletsNutrition
- 1/4 cup bread crumbsNutrition
- 1 tsp dillNutrition
- 1 dash black pepperNutrition
- 1 tbsp yellow mustardNutrition
- 1 dash saltNutrition
- 1 tbsp olive oilNutrition
- 3 tbsps light mayonnaiseNutrition
- juice from 1 lemon wedgeNutrition
- 1/3 cup onion, choppedNutrition
- 1 tbsp pickle relishNutrition
Directions
- 1Process tilapia (or any mild white fish) and onion and half the bread crumbs in food processor for just a couple of seconds until well mixed.
- 2Add dash or two of dill, salt and pepper to taste. Form into 4 patties.
- 3Lightly coat patties with rest of bread crumbs.
- 4Heat olive oil in frying pan and fry on both sides until outside is crispy and inside is cooked (about 3-4 minutes on each side).
- 5Stir mustard into mayonnaise, add squirt of lemon juice, salt and pepper to taste.
- 6Add a dollop on top of each fish cake.
- 7Serve with steamed vegetables.
