Shrimp Fra Diavolo

Ingredients
- 16 oz shrimpNutrition
- 14 1/2 oz tomatoesNutrition
- 1 tbsp leaves basilNutrition
- 1/4 tsp ground dried oreganoNutrition
- 1 tbsp parsleyNutrition
- 1 tsp pepperNutrition
- 1 tsp red pepper flakesNutrition
- 1 tsp saltNutrition
- 2 tbsps olive oilNutrition
- 1 cup chicken brothNutrition
- 3 cloves garlicNutrition
- 1 large onion, slicedNutrition
Directions
- 1Toss shrimp with salt, pepper and pepper flakes.
- 2Heat the olive oil in a skillet, add shrimp and sauté until just cooked through (2-4 minutes). Transfer cooked shrimp to a bowl.
- 3Add onion to skillet, sauté until translucent (4-5 minutes).
- 4Add tomato (with juices), chicken broth, garlic and oregano. Simmer until the sauce starts to thicken (8-12 minutes).
- 5Return shrimp and any juices that have accumulated in the bowl to the skillet/sauce. Toss and cook for about 2 minutes. Stir in basil and parsley.
- 6Serve and enjoy.
