Salmon with Sweet Peppers and Garlic

An easy-peasy, lemon squeazy, pan-roasted salmon dish.

  1. 1Heat the oil in a fry pan over high heat.
  2. 2Add peppers and garlic and cook, stirring constantly, for 2 minutes.
  3. 3Push the peppers to one side of the pan and lay the salmon beside them.
  4. 4Cook for one minute, flip and add the juice.
  5. 5Sprinkle with thyme and cayenne.
  6. 6Spoon the peppers over the fish.
  7. 7Cover, reduce the heat and cook for 6 minutes.
