Potato Cauliflower Soup

Easy to make homemade soup that's very low points.

  1. 1Chop up all the vegetables and put in large pan and fry lightly for 2 minutes. (Dry fry is the healthy option but you can use butter or oils if preferred).
  2. 2Add stock cubes (can be vegetarian version) mixed with boiling water, season with salt and pepper.
  3. 3Leave to boil then simmer for 45 minutes or until vegetables are soft.
  4. 4Liquidize and serve!
  5. 5Note: you can also add some milk at the end for a creamier version.
