- 1Heat oil in a large non-stick skillet over medium-high heat.
- 2Add onion, ginger and garlic. Cook for about 2 minutes, until onion begins to soften.
- 3Add eggplant and cook for 8 to 10 minutes. It should be lightly browned in spots and tender.
- 4Add water, curried mango sauce, chili-garlic sauce and sesame oil.
- 5Reduce heat to medium and cover the pan.
- 6Stir occasionally, 10 to 12 minutes, or until most of the liquid has been absorbed.
