Ingredients
- 1 cup instant riceNutrition
- 1/2 cup green onions, slicedNutrition
- 2 tsps marjoramNutrition
- 1/4 tsp ground black pepperNutrition
- 4 cups fat free vegetable brothNutrition
- 2/3 cup zucchini, cut into 1/2" slicesNutrition
- 4 tbsps chopped fresh basilNutrition
- 1 tsp saltNutrition
- 2 cups shredded cabbageNutrition
- 1 1/2 cups chopped carrotsNutrition
- 2 cloves garlic, finely choppedNutrition
- 1 large yellow sweet pepper, cut into 1/2" piecesNutrition
- 18 oz crushed tomatoesNutrition
Directions
- 1Mix all ingredients except rice and basil in a 3 1/2 to 6 quart slow cooker.
- 2Cover and cook on low heat setting for 6 to 8 hours or until vegetables are tender.
- 3Stir in rice and basil. (Note, if you are not using instant rice, cook the rice first as per package directions.)
- 4Cover and cook on low heat setting for about 15 minutes or until rice is tender.
