Roasted Pepper Egg Bites

  1. 1In a blender, combine eggs, cottage cheese, onion powder, garlic powder, black pepper, and salt.
  2. 2Chop your bell peppers and sauté.
  3. 3In a greased cupcake or muffin pan, pour the egg mixture equally into each muffin cup. (Does not have to be lined).
  4. 4Distribute the chopped peppers equally into each egg mixture and then add the mozzarella cheese on top.
  5. 5Bake in a preheated oven to 350°F for 23 minutes.
