- 1In a blender, combine eggs, cottage cheese, onion powder, garlic powder, black pepper, and salt.
- 2Chop your bell peppers and sauté.
- 3In a greased cupcake or muffin pan, pour the egg mixture equally into each muffin cup. (Does not have to be lined).
- 4Distribute the chopped peppers equally into each egg mixture and then add the mozzarella cheese on top.
- 5Bake in a preheated oven to 350°F for 23 minutes.
