Ingredients
- 1/2 tbsp extra virgin olive oilNutrition
- 3/4 cup no salt added diced tomatoesNutrition
- 1 tbsp chili powderNutrition
- 1 tbsp cuminNutrition
- 1 tsp leaves oreganoNutrition
- 1 dash freshly ground black pepperNutrition
- 1/4 tsp saltNutrition
- 1 cup chicken stockNutrition
- 3 cloves garlic, choppedNutrition
- 1 medium onion, choppedNutrition
- 4 oz hamburger patty (80/20)Nutrition
- 15 oz light red kidney beansNutrition
- 15 oz dark red kidney beansNutrition
Directions
- 1Heat olive oil over medium heat in a 2 quart sauce pan.
- 2Add chopped onion and garlic. Cook for 5 minutes, until almost transparent.
- 3Add your choice of meat/hamburger patty, and cook until browned.
- 4Add in chili powder, cumin, oregano, salt and pepper. Cook for another 5 minutes.
- 5Add tomatoes, rinsed beans and chicken stock. Stir well and bring to a gentle simmer.
- 6Cook for 20-25 minutes, until thickened and fragrant.
