Cheesy Egg Burrito
An easy to make, low calorie burrito that's great for a hearty brunch.

Ingredients
- 1/4 cup cilantro choppedNutrition
- 1 lavash flat breadNutrition
- 2/3 cup reduced fat Mexican style cheeseNutrition
- 4 large eggsNutrition
- 3 tbsps chopped chivesNutrition
- 2 tsps minced garlicNutrition
- 1/4 cup pieces or slices mushroomNutrition
- 1/4 cup chopped green peppersNutrition
- 1/4 cup chopped roma tomatoesNutrition
- 2 1/2 oz boiled potatoesNutrition
Directions
- 1In a sauce pan, sauté chopped vegetables and garlic in water (about 1/4 cup).
- 2Cook until tender, drain water from pan.
- 3Add eggs and add a dash of salt, pepper, chili powder and oregano to taste.
- 4Mix eggs, vegetables and spices until eggs are cooked. Remove from heat.
- 5Place egg mixture along the long side of lavash bread and top with cheese.
- 6Roll up, cut in half and each half is one serving. Enjoy.
- 7Note: you can also serve with salsa and sour cream.
