Ingredients
- 2 cups reduced fat cheddar cheeseNutrition
- 1 tsp dried marjoramNutrition
- 1 tsp leaves oreganoNutrition
- 1/4 tsp black pepperNutrition
- 2 tsps saltNutrition
- 1 tsp thymeNutrition
- 3 medium carrots choppedNutrition
- 4 stalks medium celery choppedNutrition
- 4 cloves garlicNutrition
- 2 medium onions choppedNutrition
- 1 medium green pepper choppedNutrition
- 1 can tomatoesNutrition
- 2 1/2 cups waterNutrition
- 2 cups lentilsNutrition
Directions
- 1Pre-heat oven to 375 °F (190 °C).
- 2Rinse lentils and place in shallow 9x13" baking pan, add seasonings, onions, garlic, water and can of tomatoes.
- 3Cover with foil and bake for 30 minutes.
- 4Stir carrots, celery and pepper into lentils, cook uncovered for 40 minutes, add water if needed.
- 5Sprinkle with cheese and bake for 5 more minutes.
