  1. 1In a bowl, beat egg with a fork. Pour in melted butter while stirring.
  2. 2Mix in heavy cream, vanilla and water.
  3. 3Measure 1/4 cup baking mix (low carb if available). Pour into sifter and add baking soda and Splenda. Sift together.
  4. 4Blend into wet ingredients with the fork. If consistency is too thick for pancakes and another tablespoon of water.
  5. 5Spray griddle with non-stick spray or butter lightly. Place approximately 2 tablespoons of batter for each pancake.
  6. 6Brown lightly on one side then flip and cook a few seconds more and brown as preferred.
  7. 7Serve with sugar free syrup and butter.
