Directions
- 1In a bowl, beat egg with a fork. Pour in melted butter while stirring.
- 2Mix in heavy cream, vanilla and water.
- 3Measure 1/4 cup baking mix (low carb if available). Pour into sifter and add baking soda and Splenda. Sift together.
- 4Blend into wet ingredients with the fork. If consistency is too thick for pancakes and another tablespoon of water.
- 5Spray griddle with non-stick spray or butter lightly. Place approximately 2 tablespoons of batter for each pancake.
- 6Brown lightly on one side then flip and cook a few seconds more and brown as preferred.
- 7Serve with sugar free syrup and butter.
