Directions

  1. 1Mix all the dry ingredients together in a big bowl.
  2. 2Melt the coconut oil either in the microwave or place the oil in a ceramic mug and heat in a pot of hot water over the stove to melt.
  3. 3After coconut oil is melted, pour in the bowl with dry ingredients and add remaining ingredients. Mix with whisk until batter is well blended.
  4. 4Heat pan to medium or medium-high heat depending on your stove. Spray pan with non-stick cooking spray and pour batter into desired pancake size and cook for about 3 minutes on each side.
  5. 5Top with more sugar free syrup, jelly, honey or topping of your choice.
