Chile Verde con Papas Soup

Ingredients
- 3 tbsps yellow corn mealNutrition
- 7 oz chopped green chiliesNutrition
- 15 1/2 oz great northern beansNutrition
- 15 1/2 oz cannellini beansNutrition
- 1/4 tsp cuminNutrition
- 1/4 tsp ground oreganoNutrition
- 3 cups chicken stockNutrition
- 3/4 cup waterNutrition
- 1 1/2 lbs russet potatoes, peeled, cut into 1" piecesNutrition
- 1 lb pork tenderloin, cut into 1/2" cubesNutrition
Directions
- 1Spray a non stick skillet with Pam and cook pork over medium heat for 1-2 minutes, until browned.
- 2Add about a 1/4 cup of chicken broth to the pan to loosen the browned bits in the bottom of the pan.
- 3Place pork along with the chicken broth in a slow cooker.
- 4Add remaining ingredients, except the corn meal and water. Stir well.
- 5Cover and cook on low for 4-6 hours. The last 30 minutes of cook time mix together the corn meal and water. Add to slow cooker and stir.
- 6Sprinkle cilantro over each serving, if desired. Serve.
