  1. 1In a medium bowl, stir together flour, baking powder, salt, apple pie spice, and baking soda. Make a well in the center. Set aside.
  2. 2In another bowl, stir together egg, apple juice, honey, and oil. Add egg mixture all at once to flour mixture. Stir until just combined.
  3. 3Lightly coat a heavy nonstick skillet with Pam. Heat over medium heat. For each pancake, pour 1/4 cup of batter onto hot skillet spreading to 4" diameter.
  4. 4Cook for 2-3 minutes or until pancakes have bubbly surfaces and edges are slightly dry. Turn. Cook for another 2 -3 minutes more or until golden brown.
  5. 5If desired serve with syrup.
