Honey-Apple Pancakes
These pancakes are like breakfast apple pies.

- 1In a medium bowl, stir together flour, baking powder, salt, apple pie spice, and baking soda. Make a well in the center. Set aside.
- 2In another bowl, stir together egg, apple juice, honey, and oil. Add egg mixture all at once to flour mixture. Stir until just combined.
- 3Lightly coat a heavy nonstick skillet with Pam. Heat over medium heat. For each pancake, pour 1/4 cup of batter onto hot skillet spreading to 4" diameter.
- 4Cook for 2-3 minutes or until pancakes have bubbly surfaces and edges are slightly dry. Turn. Cook for another 2 -3 minutes more or until golden brown.
- 5If desired serve with syrup.
