  1. 1Preheat oven to 350 °F (175 °C). Line a muffin tin with paper liners, or spray with cooking spray.
  2. 2Whisk together the egg, sugar, applesauce, vanilla and bananas.
  3. 3Mix the dry ingredients and add to wet. Mix just until combined.
  4. 4Bake for 20-25 minutes. Let cool and serve.
  5. 5Note: try adding 1/2 cup of mini semisweet chocolate chips to the wet ingredients.
