Chocolate Banana Muffins

Ingredients
- 1 large eggNutrition
- 1/3 cup unsweetened applesauceNutrition
- 1 cup all purpose flourNutrition
- 1/2 tsp saltNutrition
- 1 tsp vanilla extractNutrition
- 1 cup mashed bananasNutrition
- 1/2 tsp baking powderNutrition
- 1/2 tsp baking sodaNutrition
- 1/4 cup unsweetened cocoa powderNutrition
- 1/4 cup packed brown sugarNutrition
Directions
- 1Preheat oven to 350 °F (175 °C). Line a muffin tin with paper liners, or spray with cooking spray.
- 2Whisk together the egg, sugar, applesauce, vanilla and bananas.
- 3Mix the dry ingredients and add to wet. Mix just until combined.
- 4Bake for 20-25 minutes. Let cool and serve.
- 5Note: try adding 1/2 cup of mini semisweet chocolate chips to the wet ingredients.
