Southwestern Corn Chowder with Chicken

Ingredients
- 3 tbsps corn starchNutrition
- 1/4 cup hot salsaNutrition
- 1 cup red, yellow and green pepper blendNutrition
- 1 cup cornNutrition
- 1 1/2 cups lowfat milkNutrition
- 1 1/2 cups skinless chicken breast, cooked, dicedNutrition
- 1 tsp cuminNutrition
- 1 tbsp olive oilNutrition
- 1 1/2 cups chicken broth soupNutrition
- 1 cup onions, choppedNutrition
Directions
- 1Heat olive oil in fry-pan and add cumin, onions, peppers and corn. Saute til tender.
- 2Add chicken, toss to mix. Cover and cook on low heat.
- 3Meanwhile, place milk in saucepan and whisk in cornstarch on medium heat to thicken. Then add chicken broth and salsa.
- 4Add sauce to vegetable/chicken mixture. Let simmer on low for 15 minutes.
- 5Ladle into bowls. Add salt to taste.
