TexMex Rice

Ingredients
- 2 oz colby cheese, low fatNutrition
- 3 tbsps southwestern seasoningNutrition
- 1/2 tsp olive oilNutrition
- 2 breasts, bone and skin removed chicken breastNutrition
- 1 medium yellow onionNutrition
- 1 medium green bell pepperNutrition
- 1 cup mexican seasoned tomatoesNutrition
- 1/2 cup corn, cannedNutrition
- 1/2 cup diced tomatoes, cannedNutrition
- 1/2 cup black beansNutrition
- 4 cups brown rice, cookedNutrition
Directions
- 1Lightly warm a pan with extra virgin olive oil.
- 2Sauté diced bell peppers and onions until almost tender.
- 3Cut chicken into bite size cubes.
- 4Add Southwestern seasoning. Cook chicken until cooked through.
- 5Add seasoned tomatoes like Rotel brand and cook until chicken has soaked up most of the juices.
- 6Add corn, beans and diced tomatoes.
- 7Heat all the way through and when done add to the cooked rice and mix well.
- 8Add cheese to taste (you can use soy cheese as well which is great).
