Ingredients
- 1/2 tsp coarse kosher saltNutrition
- 2 tsps baking powderNutrition
- 245 g light nonfat yogurt - vanillaNutrition
- 2 large eggsNutrition
- 243 g all-purpose flourNutrition
- 3/4 cup butter (salted)Nutrition
- 1 tbsp vanilla extractNutrition
- 2 tbsps lemon peelNutrition
- 2 tbsps ground flaxseed seedsNutrition
- 1/2 tsp baking sodaNutrition
- 1 cup granulated sugarNutrition
Directions
- 1Cream butter until light and fluffy.
- 2Add lemon zest and sugar, and beat for 4 minutes.
- 3Add vanilla extract and eggs one at a time.
- 4In a separate bowl, sift and whisk other dry ingredients.
- 5Slowly combine the two mixtures, along with yogurt.
- 6Preheat oven to 425°F.
- 7Lightly grease muffin tins and fill each 3/4 full.
- 8Bake for 5 minutes at 425°F, then drop down to 400°F and continue baking for another 15 minutes until the center have set.
