Lemon Flax Seed Muffins

  1. 1Cream butter until light and fluffy.
  2. 2Add lemon zest and sugar, and beat for 4 minutes.
  3. 3Add vanilla extract and eggs one at a time.
  4. 4In a separate bowl, sift and whisk other dry ingredients.
  5. 5Slowly combine the two mixtures, along with yogurt.
  6. 6Preheat oven to 425°F.
  7. 7Lightly grease muffin tins and fill each 3/4 full.
  8. 8Bake for 5 minutes at 425°F, then drop down to 400°F and continue baking for another 15 minutes until the center have set.
