Directions
- 1Preheat oven to 350°F.
- 2Melt coconut oil in a large bowl. Whisk in honey and pumpkin, then eggs, yogurt, and vanilla.
- 3Mic dry ingredients in a separate bowl.
- 4Combine the two mixtures with a spatula.
- 5Divide into muffin cups and bake for 15-20 minutes.
- 6Cool the muffin tin on a wire rack for 10 minutes, then remove from tin and allow to cool completely.
