Directions
- 1Simply mix together the rice, peppers, avocado, beans, two-thirds of the spring onions (scallions) and cucumber.
- 2Make the dressing using the oil, lemon juice, remaining spring onion, chives, salt and pepper.
- 3Drizzle dressing over the salad.
