Ingredients
- 1/4 tsp sea saltNutrition

- 3 cups chicken brothNutrition
- 1/4 cup plain greek yogurtNutrition
- 1 medium carrotNutrition
- 6 cloves garlicNutrition
- 1 dash black pepperNutrition

- 1 tbsp chopped chivesNutrition
- 1 cup chopped onionsNutrition
- 1 cup cubed butternut winter squashNutrition
- 1 5" long sweet potatoNutrition
Directions
- 1Preheat oven to 450°F.
- 2Put whole garlic cloves on a baking sheet. Slice the other vegetables into 1" pieces and add to the baking sheet.
- 3Season with olive oil, salt, herbs, and spices.
- 4Roast in the oven 25-30 minutes turning halfway through.
- 5Pour the chicken broth in a saucepan and bring to a simmer. Turn off heat.
- 6Transfer the vegetables into a large blender or food processor.
- 7Pour hot chicken broth over vegetables then puree until smooth.
- 8Serve with yogurt, fresh thyme, and chives on top.
