Ingredients
- 2 links Italian chicken sausageNutrition
- 16 oz shrimpNutrition
- 1 tbsp olive oilNutrition
- 2 medium carrots peeled & sliced thinNutrition
- 2 cloves garlicNutrition
- 1 3/4 cups low sodium chicken brothNutrition
- 1 cup sliced onionNutrition
- 1/2 cup fresh parsleyNutrition
- 1 cup diced potatoNutrition
- 0.12 cup flourNutrition
Directions
- 1Heat oil in a large Dutch oven.
- 2Add potato, carrot, garlic, onion and sausage.
- 3Season with salt and pepper if desired and cook, stirring occasionally until potatoes are crisp-tender, 15-17 minutes.
- 4Sprinkle flour over potatoes and vegetables.
- 5Stir in broth and 1 cup water, bring to a boil then reduce to a simmer and cook until potatoes are cooked through (about 5 minutes).
- 6Add shrimp to soup, cover and simmer 3-4 minutes until shrimp are pinked and opaque.
- 7Remove from heat and add parsley.
