Spicy Shrimp and Chicken Gumbo
A hearty shrimp and chicken gumbo with lots of spicy flavor.

Ingredients
- 1 tbsp crumbled bay leafsNutrition
- 1 tbsp parsleyNutrition
- 1/2 tsp cayenne pepperNutrition
- 1 tsp thymeNutrition
- 1 breast, bone and skin removed chickenNutrition
- 32 fl oz beef broth, low sodiumNutrition
- 3 tsps minced garlicNutrition
- 1 cup chopped onionNutrition
- 1 cup chopped green pepperNutrition
- 3 cups brown riceNutrition
- 20 oz diced tomatoesNutrition
- 1 lb peeled shrimpNutrition
Directions
- 1Cut chicken breast into bite size pieces and sauté till juices run clear.
- 2Add onion, garlic, and green peppers. Sauté till slightly tender.
- 3Add tomatoes, herbs, spices (Cajun seasoning can also be added) and broth.
- 4Simmer until it bubbles. Then add raw shrimp. Allow it to simmer for about 15 minutes.
- 5Serve over the rice.
- 6Note: I add a little "Tony Saturies" Cajun seasoning or Creole seasoning while the gumbo simmers.
