  1. 1Preheat oven to 400 °F (205 °C). Spray mini muffin pan with baking spray.
  2. 2Mix together all dry ingredients in a bowl.
  3. 3Mix in wet ingredients except for blueberries.
  4. 4Gently fold in blueberries.
  5. 5Spoon 1 rounded tablespoon of mixture into each cup of the muffin pan.
  6. 6Bake 8-10 minutes or when a toothpick comes out clean and top is golden. If using a standard muffin pan, bake 18-20 minutes.
