Black beans with cilantro, lime, garlic and onion.

Directions

  1. 1Mince garlic and red onion.
  2. 2De-stem and chop cilantro. Careful not to touch the pepper - deseed and mince the hot chili pepper.
  3. 3Mix ingredients together in a bowl with the juice of the lime.
  4. 4Chop tomato. Remove seeds if desired.
  5. 5Drain and rinse canned black beans.
  6. 6Mix together all ingredients.
  7. 7Serve tossed with a salad or alone.
  8. 8Note: can also be used in a wrap and delicious with avocado.
