Black Bean Cilantro Salad
Black beans with cilantro, lime, garlic and onion.

Directions
- 1Mince garlic and red onion.
- 2De-stem and chop cilantro. Careful not to touch the pepper - deseed and mince the hot chili pepper.
- 3Mix ingredients together in a bowl with the juice of the lime.
- 4Chop tomato. Remove seeds if desired.
- 5Drain and rinse canned black beans.
- 6Mix together all ingredients.
- 7Serve tossed with a salad or alone.
- 8Note: can also be used in a wrap and delicious with avocado.
