Directions

  1. 1Stir fry the onion in low fat cooking spray for 5 minutes.
  2. 2Add the sliced carrots, vegetable stock and seasoning (salt and pepper) to taste.
  3. 3Simmer for 15 minutes until the carrots are tender.
  4. 4Add the chopped coriander.
  5. 5Liquidize and serve.
