Directions
- 1Stir fry the onion in low fat cooking spray for 5 minutes.
- 2Add the sliced carrots, vegetable stock and seasoning (salt and pepper) to taste.
- 3Simmer for 15 minutes until the carrots are tender.
- 4Add the chopped coriander.
- 5Liquidize and serve.
