Lentils with Pork Loin

Spiced lentils cooked with lean roast pork loin.

  1. 1Rinse lentils in cold water. Set aside.
  2. 2Dice onions and tomatoes. Slice a carrot into small strips, or buy "matchstick" carrots, use a 1/4 cup or more to your taste. Set aside.
  3. 3Cut leftover pork loin into small pieces. Approximately 8 ounces. Set aside.
  4. 4Sauté onions in olive oil until soft. Add tomatoes and carrots. Add listed spices, measure to your own taste. Sauté all ingredients for five minutes.
  5. 5Add pork pieces. Add enough cold water to cover.
  6. 6Bring to a boil. Turn down and cook until lentils are tender. (You can also cook this in a pressure cooker, following the same instructions, but the cook time will be shorter.)
  7. 7Serve alone or the side dish of your choice. Rice makes a good side dish, if your diet allows.
