Minestrone Soup

Ingredients
- 1 dash pepperNutrition
- 1 dash saltNutrition
- 1 tbsp olive oilNutrition
- 2 cubes beef stockNutrition
- 2 cubes chicken stockNutrition
- 2 cups chopped cabbageNutrition
- 2 medium carrots, choppedNutrition
- 2 stalks medium celery, choppedNutrition
- 2 cloves garlic, crushedNutrition
- 1 medium onion, finely choppedNutrition
- 4 tbsps parsley, choppedNutrition
- 1 cup tomato pasteNutrition
- 12 cups waterNutrition
- 2 cups kidney beansNutrition
- 1 cup brown lentilsNutrition
- 2 tsps white sugarNutrition
- 1 cup small shells pastaNutrition
- 1/4 cup riceNutrition
Directions
- 1Heat oil in a large pot and sauté onion, celery, garlic, parsley and carrots, until limp. Add tomato paste and cabbage. Stir to combine.
- 2Add stock powder, water, sugar, rice, pasta, beans and lentils. Stir well and bring to the boil.
- 3Reduce heat, cover and simmer for 45 minutes. Season with salt and pepper.
- 4Great served with a sprinkle of fresh parmesan cheese!
