  1. 1Put 4 boneless, skinless chicken breasts into an 8x8" pan sprayed with olive oil.
  2. 2Pour one small jar of chunky salsa (like Pace brand or any no sugar added thick salsa) over the chicken.
  3. 3Bake in 350 °F (175 °C) oven for about 25 minutes, checking occasionally.
  4. 4Remove the chicken dish and put the sharp cheddar cheese (or whatever cheese variety you like) and some chopped green onions on top and return to oven until cheese is melted and bubbly.
  5. 5Top with a dollop of low-fat sour cream when serving, if desired.
