  1. 1Wash and cut off both ends of zucchini.
  2. 2Use a peeler to make thin slices of the zucchini. When you get to the seeds, flip over and peel from other side because the seeds don't like to cooperate!
  3. 3Brown the ground beef and add sauce.
  4. 4Mix egg, cottage cheese and parmesan cheese in a medium bowl.
  5. 5Put down a thin layer of the sauce and meat in the bottom of a 9x9" pan. Make a thin layer of zucchini on top, then a layer of the cheese and egg mixture, followed by a layer of zucchini. Repeat layering until the pan is almost full and the top layer is the sauce and meat mixture.
  6. 6Spread shredded mozzarella cheese on top.
  7. 7Bake on 350 °F (175 °C) for 45 minutes.
  8. 8Let sit for 30 minutes before serving.
