Noodleless Lasagna
Faux noodles make this terrific lasagna low carb.

- 1Wash and cut off both ends of zucchini.
- 2Use a peeler to make thin slices of the zucchini. When you get to the seeds, flip over and peel from other side because the seeds don't like to cooperate!
- 3Brown the ground beef and add sauce.
- 4Mix egg, cottage cheese and parmesan cheese in a medium bowl.
- 5Put down a thin layer of the sauce and meat in the bottom of a 9x9" pan. Make a thin layer of zucchini on top, then a layer of the cheese and egg mixture, followed by a layer of zucchini. Repeat layering until the pan is almost full and the top layer is the sauce and meat mixture.
- 6Spread shredded mozzarella cheese on top.
- 7Bake on 350 °F (175 °C) for 45 minutes.
- 8Let sit for 30 minutes before serving.
