Edamame Salad
Fresh colorful salad with lots of protein from edamame (soy beans).

Ingredients
- 1 dash pepperNutrition
- 1 dash saltNutrition
- 2 tbsps olive oilNutrition
- 1 lime yields lime juiceNutrition
- 3 tbsps black olives, coarsely choppedNutrition
- 3/4 cup chopped red cabbageNutrition
- 1/2 cucumber, dicedNutrition
- 1 clove garlic, finely mincedNutrition
- 1 cup parsley, mincedNutrition
- 1 lb edamameNutrition
- 1/2 cup cherry cherry tomatoes, halvedNutrition
Directions
- 1Cook edamame according to package directions.
- 2Allow to cool.
- 3Meanwhile, prepare other vegetables and mix with cooled edamame in a large bowl with olive oil, lime juice, garlic, salt and pepper.
- 4Chill and serve.
