Oatmeal Banana Muffins

Ingredients

Directions

  1. 1Mix together egg and vegetable oil.
  2. 2Stir in brown sugar and cinnamon.
  3. 3Mash bananas and add to mixture.
  4. 4Stir in quick oats and pancake and baking mix.
  5. 5Spoon into greased muffin pans and bake at 350 °F (175 °C) for 18 minutes.
  6. 6Note: 1/2 cup chopped nuts can be added for protein. Muffins can be frozen.
