- 1Mix together egg and vegetable oil.
- 2Stir in brown sugar and cinnamon.
- 3Mash bananas and add to mixture.
- 4Stir in quick oats and pancake and baking mix.
- 5Spoon into greased muffin pans and bake at 350 °F (175 °C) for 18 minutes.
- 6Note: 1/2 cup chopped nuts can be added for protein. Muffins can be frozen.
