Green Beans Alfredo
An Atkins low-carb side inspired by a pasta favorite.

- 1Boil green beans in a quart of water until they start to get tender.
- 2Drain green beans and place them in a medium baking dish. Set aside. Heat oven to 350 °F (175 °C).
- 3In a saucepan, heat olive oil on medium heat.
- 4Throw in minced garlic and stir until slightly browned, add heavy cream and cream cheese.
- 5Break up cream cheese with spatula. Keep stirring until cream cheese is mostly melted. Remove from heat, stir in the parmesan cheese.
- 6Pour cheese mixture over green beans and stir to coat.
- 7Place in 350 °F oven for 20 minutes, stirring every 5 minutes.
- 8Let cool about 10 minutes before serving. Salt and pepper to taste.
