Chocolate Peanut Butter Banana Cookies

  1. 1Pre-heat oven to 375 °F (190 °C).
  2. 2Combine flour, baking soda and salt in small bowl.
  3. 3Mash ripe bananas well, add granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy.
  4. 4Gradually beat in flour mixture. Melt peanut butter and add to bowl. Stir in morsels.
  5. 5Drop by rounded tablespoon onto ungreased baking sheets.
  6. 6Bake for 11 to 13 minutes or until golden brown (may take a little longer when using bananas to cook all the way through).
  7. 7Cool on baking sheets for 2 minutes; remove to wire racks (or paper towel) to cool completely.
  8. 8Note: no egg or butter is used so these are vegan friendly, plus they stay nice and moist.
