Chocolate Peanut Butter Banana Cookies

Ingredients
- 1 cup reduced fat chunky peanut butterNutrition
- 1 tsp kosher saltNutrition
- 1 1/2 cups all purpose flourNutrition
- 2 cups chocolate chipsNutrition
- 2 bananasNutrition
- 1 tsp vanilla extractNutrition
- 1 tsp baking sodaNutrition
- 3/4 cup packed brown sugarNutrition
- 3/4 cup granulated sugarNutrition
- 3/4 cup wheat flourNutrition
Directions
- 1Pre-heat oven to 375 °F (190 °C).
- 2Combine flour, baking soda and salt in small bowl.
- 3Mash ripe bananas well, add granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy.
- 4Gradually beat in flour mixture. Melt peanut butter and add to bowl. Stir in morsels.
- 5Drop by rounded tablespoon onto ungreased baking sheets.
- 6Bake for 11 to 13 minutes or until golden brown (may take a little longer when using bananas to cook all the way through).
- 7Cool on baking sheets for 2 minutes; remove to wire racks (or paper towel) to cool completely.
- 8Note: no egg or butter is used so these are vegan friendly, plus they stay nice and moist.
