Ingredients
- 5 tbsps parsley flakesNutrition
- 1 tsp pepperNutrition
- 5 tsps Dijon mustardNutrition
- 1 tsp saltNutrition
- 1/2 cup vinegarNutrition
- 3 tbsps vegetable oilNutrition
- 1 cup chopped celeryNutrition
- 3/4 cup chopped red onionNutrition
- 1 cup chopped red peppersNutrition
- 3 cups black beansNutrition
- 2 sweetener packetsNutrition
- 2 cups yellow cornNutrition
- 1 1/2 oz waterNutrition
Directions
- 1In a bowl, combine beans, red pepper, corn, celery, onions and dry parsley.
- 2To mix dressing: whisk together the vinegar, mustard, sweetener, salt and pepper. Whisk in oil and water.
- 3Pour over salad and mix well.
- 4Cover and refrigerate.
