Fiesta Lime Chicken with Zucchini

Ingredients
- 1 1/2 tsp minced garlicNutrition
- 1 1/2 tsp Montreal chicken seasoningNutrition
- 2 tbsp extra virgin olive oilNutrition
- 1/4 cup lime juiceNutrition
- 1/4 cup cilantroNutrition
- 1/2 cup parsleyNutrition
- 1 yellow squashNutrition
- 2 pieces skinless boneless chicken breast cutletsNutrition
- 1 tbsp paprikaNutrition
- 1 1/2 dashes pepperNutrition
- 1 dash saltNutrition
- 1/2 cup chopped scallionNutrition
- 2 large zucchiniNutrition
- 2 1/2 Italian tomatoesNutrition
- 1 fl oz white wineNutrition
Directions
- 1To prepare, slice zucchini and yellow squash into 1/4" sections.
- 2Dice tomatoes into the texture of salsa crudo. Mince garlic, parsley, scallions and cilantro.
- 3Combine diced tomatoes with cilantro, scallions, salt and pepper to create salsa crudo topping.
- 4Season chicken breast cutlets with seasoning, paprika and parsley. Begin to warm garlic & extra virgin olive oil in sauté pan.
- 5When garlic aromas become apparent, add seasoned chicken cutlets and add white wine.
- 6Sauté chicken in pan until chicken is 3/4 done. At that point, add zucchini, yellow squash, and lime juice. Cover and steam until vegetables reach desired texture.
- 7Remove chicken and vegetables when cutlets reach a caramelized-looking texture.
- 8Plate chicken and vegetables, and finish by adding desired amount of salsa crudo to the top of chicken. Enjoy!
