Spicy Chicken Kebabs

  1. 1Chop chicken into cubes.
  2. 2Sauté garlic in olive oil.
  3. 3Mix chicken, mushrooms, tomato, garlic and thyme together.
  4. 4Chop the half of the onion into half.
  5. 5Alternate a piece of onion, a mushroom, two pieces of cubed chicken and tomato onto bamboo skewer that has been soaking in cold water.
  6. 6Continue alternating until skewer is full. Should be about 3 mushrooms and 3 tomatoes per skewer.
  7. 7Grill on pre-heated grill on about low to med for about 5 minutes per side.
  8. 8Note: remember, chicken will cook faster because it is cubed.
