  1. 1Cut a large yam into 3/4" cubes.
  2. 2Cut onion into medium-size pieces.
  3. 3Mince garlic cloves.
  4. 4Heat olive oil in a large fry pan and add the minced garlic. Heat until pungent.
  5. 5Add chopped onions and cubed yams, and saute until tender.
  6. 6Season with garam masala to taste.
  7. 7Sprinkle with orange juice.
