General Tso Chicken

Ingredients
- 2 tbsp SplendaNutrition
- 1 1/2 tbsp cornstarchNutrition
- 16 oz boneless skinless chicken breastNutrition
- 1 tbsp red wine vinegarNutrition
- 2 cups cooked brown riceNutrition
- 1 tbsp extra virgin olive oilNutrition
- 1/2 tsp ground gingerNutrition
- 1 tsp red pepper flakesNutrition
- 3/4 cup low sodium chicken brothNutrition
- 2 cups chopped broccoliNutrition
- 2 cloves garlic cloveNutrition
- 2 medium scallionsNutrition
- 2 tbsps low sodium soy sauceNutrition
Directions
- 1In a medium bowl, whisk together broth, cornstarch, sweetener (like Splenda), soy sauce, vinegar and ginger; set aside.
- 2Heat oil in a wok or large skillet over medium-high heat. Add scallions, garlic and red pepper flakes; cook, stirring frequently, 2 minutes. Add chicken; sauté until browned all over, about 5 minutes.
- 3Add reserved sauce to pan and simmer until sauce thickens and chicken is cooked through, about 3-5 minutes.
- 4After sauce has slightly thickened, add the broccoli florets. Remove from heat.
- 5Serve chicken and sauce over rice.
- 6Yields about 1 cup chicken with sauce and 1/2 cup rice per serving.
