  1. 1Pre-heat oven to 400 °F (200 °C). Coat a baking sheet with cooking spray.
  2. 2In resealable bag or shallow dish combing oats, and all spices. Mix well and set aside.
  3. 3Brush each chicken breast with Dijon mustard.
  4. 4Add chicken to oat mixture with tongs and turn to coat both sides.
  5. 5Transfer chicken to prepared baking sheet and spray with cooking spray.
  6. 6Bake 30 minutes, until golden brown and cooked through.
