Fettuccine with Light Alfredo Sauce

  1. 1In saucepan melt the butter.
  2. 2Add minced garlic cloves; cook over low heat 1 minute.
  3. 3Whisk in 3 flour, then whisk in fat free half-and-half until well combined.
  4. 4Finally, whisk in salt, pepper and nutmeg, and bring to boil, whisking frequently.
  5. 5Reduce heat and simmer 5 minutes or until thick.
  6. 6Remove from heat and stir in grated parmesan cheese.
  7. 7Serve over cooked fettuccine.
