  1. 1Beat eggs in a small bowl.
  2. 2Heat 1/2 tbsp olive oil in hot wok, scramble eggs, and reserve.
  3. 3In wok, add remainder of olive oil, onion, garlic, and pork. Cook until browned.
  4. 4Add tomato, sugar, pepper, and salt. Add rice and mix well. Cook for 6-8 minutes.
  5. 5Add eggs and soy sauce, mix well.
  6. 6Note: pork can be substituted with chicken or beef.
