Thai Fried Rice

Ingredients
- 1 tsp sugarNutrition
- 1 tbsp soy sauceNutrition
- 2 cups cooked, diced porkNutrition
- 2 large eggsNutrition
- 1/2 tsp pepperNutrition
- 3 1/2 tbsp extra virgin olive oilNutrition
- 1 tsp saltNutrition
- 1 clove garlicNutrition
- 1 tbsp chopped green onionNutrition
- 1 cup chopped or sliced tomatoNutrition
- 1 cup cooked riceNutrition
Directions
- 1Beat eggs in a small bowl.
- 2Heat 1/2 tbsp olive oil in hot wok, scramble eggs, and reserve.
- 3In wok, add remainder of olive oil, onion, garlic, and pork. Cook until browned.
- 4Add tomato, sugar, pepper, and salt. Add rice and mix well. Cook for 6-8 minutes.
- 5Add eggs and soy sauce, mix well.
- 6Note: pork can be substituted with chicken or beef.
