Spicy Chicken Tortilla Casserole

Ingredients
- 3 tbsp chipotle pepper sauceNutrition
- 4 oz Monterey Jack cheeseNutrition
- 1 can reduced sodium chicken brothNutrition
- 4 cups canned petite diced tomatoesNutrition
- 16 oz boneless skinless chicken breastsNutrition
- 10 oz corn tortilla chipsNutrition
- 1/4 tsp saltNutrition
- 1 1/2 tbsps vegetable oilNutrition
- fresh cilantro, choppedNutrition
- 2 cloves garlic, finely choppedNutrition
- 1 cup chopped onionNutrition
Directions
- 1Arrange tortilla chips in a 13x9" baking dish and sprinkle with chicken.
- 2Heat oil in a large saucepan over medium-high heat; add onion and cook until tender and lightly browned, about 7 minutes.
- 3Stir in garlic and cook 1 minute.
- 4Add tomatoes, broth, Tabasco chipotle sauce, and salt.
- 5Bring to a boil, reduce heat, and simmer 5 minutes.
- 6Stir in cilantro and pour evenly over chips.
- 7Sprinkle with cheese and bake in a 400 °F (200 °C) oven until lightly browned and bubbly, about 15 minutes.
- 8Serve immediately.
