Thai Sweet & Sour Stir Fried Pork

Ingredients
- 3 tsps sugarNutrition
- 12 oz boneless porkNutrition
- 3 tbsps vegetable oilNutrition
- 2 tbsps fish sauceNutrition
- 1 tbsp cilantroNutrition
- 4 oz pineappleNutrition
- 1/2 cucumberNutrition
- 4 cloves garlicNutrition
- 1 medium red onionNutrition
- 3 small scallionsNutrition
- 1 large red pepperNutrition
- 2 plum tomatoesNutrition
Directions
- 1Slice pork into thin strips.
- 2Heat oil in large wok and add the finely sliced garlic.
- 3Add pork once garlic is golden and stir-fry for 4-5 minutes. Then add sliced onion.
- 4Season with fish sauce, sugar, and ground black pepper. Stir in cilantro.
- 5Stir-fry for 3-4 minutes until pork is cooked through and onion browned.
- 6Add all the vegetables sliced longways (cucumber, red pepper, scallions and small wedged tomatoes).
- 7Add pineapple chunks and stir-fry for another 3-4 minutes. Enjoy!
