  1. 1Pre-heat oven to 400° F (200° C) and spray baking sheet.
  2. 2Cover both sides of fish with creole seasoning, then salt and pepper to taste.
  3. 3Bake for 10-12 minutes.
  4. 4To cooked rice, add tomatoes, cilantro, creole seasoning and garlic powder
  5. 5Continue cooking rice mix on low until fish is cooked, stirring occasionally and adding water if needed to keep from stick to bottom of pan.
  6. 6Enjoy.
