Thai Chicken Larb Salad
A traditional Thai dish with a sauce made from fresh lime juice, fish sauce, lemongrass and chili.

Ingredients
- 1 tbsp lemongrassNutrition
- 4 tbsps vegetable oilNutrition
- 1/4 cup fresh lime juiceNutrition
- 4 tbsps fish sauceNutrition
- 4 leaves outer lettuce leavesNutrition
- 32 oz ground chickenNutrition
- 1 slice, thin red onionNutrition
- 1/4 cup chopped green onionNutrition
- 3 dried red chiliesNutrition
- 1/4 cup ground toasted riceNutrition
Directions
- 1To make toasted rice, place rice in a dry hot wok; swirl until golden brown, allow to cool, then grind in a mortar and pestle or spice mill.
- 2Heat the oil over medium heat in wok and add the chicken; stir-fry until cooked through.
- 3Drain chicken and place in mixing bowl, adding lemongrass, green onion, red onion, fish sauce, lime juice, chiles, and ground rice; mix well and set aside.
- 4On a bed of lettuce leaves, arrange chicken mixture and garnish with mint and cilantro.
