Ingredients
- 2 tbsps chili powderNutrition
- 2 tsps ground oreganoNutrition
- 1/4 tsp cayenne pepperNutrition
- 1 tbsp extra virgin olive oilNutrition
- 4 cloves garlicNutrition
- 1 medium onion, choppedNutrition
- 1 large bell pepper, dicedNutrition
- 1 tbsp tomato pasteNutrition
- 2 cans diced tomatoes with juice, no salt addedNutrition
- 1 lb extra lean ground beefNutrition
- 8 oz tomato sauce, no salt addedNutrition
- 15 oz black beans, drainedNutrition
- 15 oz pinto beans, drainedNutrition
Directions
- 1In a large sauce pan, heat oil over medium-high heat.
- 2Add beef, 1 tbsp chili powder, and cayenne. Cook, stirring to break up meat, for about 5 minutes or until browned. Using a slotted spoon, transfer meat to a plate.
- 3Add bell pepper, onion, garlic, oregano, and remaining chili powder to the same saucepan. Cook over medium heat, stirring occasionally, until onion begins to soften, for about 3 minutes.
- 4Stir in tomato paste, then add diced tomatoes with juice, black beans, pintos, and tomato sauce.
- 5Cook and simmer for 10 minutes, stirring occasionally.
- 6Uncover, add cooked beef, and cook over medium heat until it thickens, about 5 minutes. Serve warm.
- 7Note: You may add light sour cream and fat-free cheese.
