  1. 1Boil chicken breast for 20 minutes or until all pink is cooked out.
  2. 2Drain water and finely chop chicken breast. Spread out chicken breast on chilled plate and place in refrigerator for quick cool down.
  3. 3While chicken is chilling, finely chop all other ingredients except spinach then mix with chilled chicken in a bowl.
  4. 4Stir in mayonnaise, mustard and yogurt.
  5. 5Divide mixture into 5 parts and place on split croissants lined with 10 spinach leaves.
