Waldorf Chicken Salad Sandwich

Ingredients
- 1 tsp Dijon mustardNutrition
- 1/2 oz red onionNutrition
- 1 1/2 oz nonfat plain Greek yogurtNutrition
- 1/4 cup pecans, choppedNutrition
- 3 tbsps fat free mayonnaiseNutrition
- 1 skinless chicken breastNutrition
- 5 croissantsNutrition
- 1/2 cup grapesNutrition
- 1/2 medium celery stalkNutrition
- 50 leaves spinachNutrition
Directions
- 1Boil chicken breast for 20 minutes or until all pink is cooked out.
- 2Drain water and finely chop chicken breast. Spread out chicken breast on chilled plate and place in refrigerator for quick cool down.
- 3While chicken is chilling, finely chop all other ingredients except spinach then mix with chilled chicken in a bowl.
- 4Stir in mayonnaise, mustard and yogurt.
- 5Divide mixture into 5 parts and place on split croissants lined with 10 spinach leaves.
